Being flush with prime chital deer at the moment it was on the menu again tonight. All the off cuts were minced and frozen when we butchered the deer so I decided to defrost a bag of that for dinner.
This one is nice and simple.
To the mince I added bread crumbs and onion and a raw egg. From the garden thyme, parsley and oregano to taste all chopped and mixed through the mince. ‘
I toasted the buns, fried up the patties and added normal burger stuff to the mix. I didn’t go too wild and stuck with avocado, tomato, cheese, lettuce and caramelised onion. Beetroot, eggs and any other stuff usually associated with burgers could be used. Some of my Nan’s homemade tomato sauce finished off the burgers.
Chips were handcut chunky. A mix of paprika, a small amount of sugar, sea salt and pepper was ground up in a mortar and pestle and then sprinkled liberally on them.
Served up with some of James Squires finest Pale Ale.
McDonalds? I think not.
